Distillers Notes: Made from 100% gluten free Sorghum that is grown under 10 miles away.  This is a product that is 100% grown, fermented, distilled, and bottled in Schoharie County.  We distill this vodka 4 – 5 times before we put it through the charcoal filtration to ensure an incredibly smooth Sorghum Vodka.  Bottled by hand.

How StoryHouse Vodka Can Be Used: Wonderful in a StoryHouse and Soda with a lemon.  Or use this as you would any vodka, but shows best when the vodka is the star in the drink, as in a Martini or Gibson.

Schoharie Shine

Bottle Size: 750 ml

Alcohol: 90 proof

Distillers Notes: This is a specialty spirit made from Schoharie grown Sorghum which has often been used in the south by moonshiners when cheaper cane sugar was unavailable.  We only use the sorghum and crystal clear Schoharie water to distill in our open fire pot stills.  This is our tribute to those southern moonshiners.  Bottled by hand.

How Shine Can Be Used: Shine can be had on the rocks or mixed in a little club soda and is delicious and smooth all by itself being distilled 3 or 4 times. However it also mixes well in whatever you put with it. Use it like vodka or tequila in mixed drinks, or mix in some pink lemonade or raspberry iced tea for refreshing summer drink. You can also infuse the shine with any fruit you want: pineapple, black cherry, strawberry, blackberry, or one of our favorites watermelon and mint!

Review from the Beverage Tasting Institute: “Golden amber color.  Aromas and flavors of dried apple, pecan praline, and maple rice cereal with a soft, off-dry medium body and a buoyant, nutty, lightly peppery Irish Whisky finish.”

Distillers Notes: Schoharie Mapple Jack is a unique blend of Apple Brandy with just a touch of Maple Syrup.  This Brandy is aged at 100 Proof in oak casks until the desired taste and aroma profile is achieved. We then blend the spirit with crystal clear Schoharie water and just a touch of locally produced Maple syrup. Bottled by hand.

How Mapple Jack Can Be Used: Pour Mapple in a cordial glass for a perfect after dinner liqueur or pour it over your favorite ice cream.  Mix it with a little ginger ale for a refreshing summer drink, or make a Side Car or Sazarac with it.  Also wonderful to warm up by the fire with a little hot mulled cider and Mapple.

Distillers Notes: This is a traditional European Eau de Vie style. An apple brandy that is double distilled to capture the beautiful aroma of fresh apples. We use only local apples, but we use a mixture of several varieties of apples to get the desired flavor profile. Bottled by hand.

How Eau De Vie Can Be Used: Eau De Vie De Pomme is made to be had as a digestive or aperitif.  Traditionally served in a small glass in between courses of a large meal.  This is for the true purest heart, as traditionally you do not mix anything with this and focus on the beautifully captured fresh cut apple aroma.

Aged Apple Brandy

Distillers Notes: An Aged Apple Brandy made in the French Calvados style. This is a blend of some of our finest Aged Apple Brandies up to 4 years old.  The Apples for this brandy are within a three county radius from the Distillery.  We ask for the juice from several varieties of apples (eating, baking, cider) and we ferment right on premise.  Then we distill the fermented apple juice in our copper stills and house it in American oak barrels at about 120 proof.  This is the new world version of an old world classic.

How Aged Apple Brandy Can Be Used: Enjoy neat or on the rocks.  Can be used in brandy drinks, but shows best when alone.

Cinister Shine

Bottle Size: 375 ml & 750 ml

Alcohol: 60 proof

Distillers Notes: The base is made from 100% gluten free Sorghum that is grown under 10 miles away. Cinister Shine was conceived, carefully created, and craftily distilled by Emily Marsh our assistant distiller.  She wanted a shot that she and her girlfriends could order without fear.  She has created a “cinnfully” good spirit!

How Cinister Shine Can Be Used: Wonderful as a chilled shot.  Can also be added to hard apple cider for a “Cinnful Apple”.  Mix it up with our Mapple Jack for a “Cinister Jack”.

Malt Whiskey

Bottle Size: 375 ml

Alcohol: 80 proof

Distillers Notes: Our First Whiskey is made from 100% Malted Barley. Distilled, Aged and Bottled on site at 80 Proof. The unique flavor profile is achieved by aging in New Charred American Oak for a minimum of six months before being blended into a 2nd barrel containing older KyMar Malt Whiskey from previous batches.

Color:  Dark Golden Amber
Nose: Sweet, Vanilla, hint of oak and bread
Palette:  Malt, hint of grain with a pleasant spice finish

How Malt Whiskey Can Be Used: The distiller highly recommends enjoying this neat or with just a splash of water. Can also be used in most traditional Whiskey based cocktails.

KyMar Apple Wine

Bottle Size: 750 ml

Alcohol: 11.5%

Appellation: New York

Wine Makers Notes: The Apples come to us from three orchards, one of whom is in our own county and the other 2 in neighboring counties.  The juice we get is from several varieties of apples; eating, baking, and cider apples.  We ferment during the winter allowing for natural cold stabilization to happen during fermentation.  That means it is a slow fermentation that happens naturally, we do not dictate how fast or slow it ferments, we let the wine tell us when it is done.  After tasting the Apple Wine throughout the fermentation we decided to make it on the dryer side.  The end result is a balanced fruit wine with ripe sweetness and acidity that complement each other.

Tasting Notes: Enjoy hints of honey crisp apples on the nose, with a clean taste of fresh cut red delicious apples on the front of the pallet. The sweetness quickly turns to tart on the finish with notes of granny smith apples lingering.

Pairings:  This is a very easy drinking wine that should be served chilled down below room temperature.  Have it by itself as you relax on a hot day, or with family and friends for gathers in the fall.  Pairs well with appetizers and finger foods.

Cabernet Sauvignon

Bottle Size: 750 ml

Alcohol: 11.5%

Wine Makers Notes: The Cabernet Sauvignon grapes come from the Niagara region of NY.  It was a nice hot summer, so the grapes had a high brix count.  The juice fermented first in 200 gallon cubes, then we moved it to finish fermenting in our used apple brandy barrels.  We ferment during the winter allowing for natural cold stabilization to happen during fermentation.  That means it is a slow fermentation that happens naturally, we do not dictate how fast or slow it ferments, we let the wine tell us when it is done.  We let the sugars ferment out completely, leaving a nice dry cabernet sauvignon.  The aging in apple brandy barrels left a complexity in the wine that is hard to find in other NYS Cabs.

Tasting Notes: Beautiful food friendly Cabernet Sauvignon that is finished in Aged Apple Brandy Barrels.  Ripe fruit of black cherries and a touch of pepper on the pallet from the beginning to the end.  Finishes strongly with nice body and flavors of smoky apple wood as well.

Pairings:  Great to pair with mild soft cheeses, or dishes with a red sauce.  Also great for any meal of beef or pork from the crockpot, or serve it with any meat or veggies off the grill.

Un-Oaked Chardonnay

Bottle Size: 750 ml

Alcohol: 11.5%

Appellation: New York

Wine Makers Notes: The chardonnay grapes come from the Niagara region of NY.  It was a nice hot summer, so the grapes had a high brix count.  The juice went through two fermentations before finally settling at around 1% R.S.  We ferment during the winter allowing for natural cold stabilization to happen during fermentation.  That means it is a slow fermentation that happens naturally, we do not dictate how fast or slow it ferments, we let the wine tell us when it is done.  After tasting the Chardonnay at the second fermentation we made the decision not to oak it, as it had such beautiful fruit to it that we did not want to lose that by adding a harsh element like oak.  The end result is a balanced unoaked chardonnay with ripe fruit and acidity that complement each other.

Tasting Notes: Nice balance between fruit and acidity.  The nose gives you hints of honeysuckle and melon with acidity from pineapple.  The beginning pallet opens up with fresh green fruits such as green apple with a hint of kiwi, giving the allusion of a sweeter style wine until the middle pallet of acidity hits with notes of grapefruit and granny smith apples.  The finish then brings those two components together leaving your taste buds feeling fresh and wanting more.

Pairings:  Put this wine with mild and creamy cheeses such as goat or brie.  This wine is also great to put with a heavy meal of pasta and cream sauce, or a light meal of cob salad with blue cheese.  This wine will also pair nicely with any seafood dish such as scallops in garlic sauce or it will cool down a fra diavolo del mar.  Or just sip and enjoy while relaxing on a warm day!
